I’m a little embarrassed by how much I love this dish…

This Mexican Taco Lasagna is a fun twist on a classic! Layers of ground beef, beans, corn, and cheese are sandwiched between tortillas and baked to perfection. It’s a hearty and flavorful dish that’s perfect for a weeknight dinner or a casual gathering.

Ground Beef Mixture:

| Garlic, minced | 2 cloves | 
| Taco seasoning mix | 1 packet | 
| Black beans, drained and rinsed | 1 can (15 ounces) | 
| Corn kernels (fresh or frozen) | 1 cup | 
| Salsa | 1 cup |

| Small flour tortillas | 8 | 
| Shredded Mexican blend cheese | 2 cups | 
| Diced green chilies, drained (optional) | 1 can (4 ounces) | 
Instructions:

Prepare the Ground Beef Mixture: - Cook ground beef in a large skillet over medium heat until browned.
- Add onion and garlic, cook until softened.
- Stir in taco seasoning mix, black beans, corn, and salsa. Simmer until heated through.
 
- 
Assemble the Lasagna: - Preheat oven to 375°F (190°C).
- In a baking dish, layer 4 tortillas.
- Top with half of the ground beef mixture and half of the cheese.
- Repeat with remaining tortillas, ground beef mixture, and cheese.
- Optionally, sprinkle diced green chilies over the top layer of cheese.
 
- 
Bake: - Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
 
- 
Serve: - Let cool slightly before serving.
- Garnish with cilantro, tomatoes, green onions, sour cream, and jalapeños.
