Classic 80s Beef Croquettes with Rice

Bread crumbs 1 cup
Water (for bread crumbs) 1 cup
Onion, chopped 1 medium
Garlic cloves 3
Ground beef 500 grams
Salt 1 1/2 teaspoons
Egg 1 whole
Black pepper 1 generous pinch
Bread crumbs (for coating) Extra
Oil (for frying) As needed

For the Rice

Hot water 600 ml
Unsalted butter, diced 20 grams

Instructions:

Preparing the Croquettes

  1. Hydrate the Ingredients:

    • In separate bowls, combine rice with water and bread crumbs with water. Set aside.
  2. Prepare the Meatball Mixture:

    • Pulse onion and garlic in a food processor.
    • In a large bowl, combine ground beef, processed onion-garlic mixture, salt, egg, pepper, and hydrated bread crumbs. Mix well.
  3. Form and Coat the Croquettes:

    • Shape tablespoons of meat mixture into balls.
    • Coat each ball in bread crumbs.
  4. Fry the Croquettes:

    • Heat oil in a pan over medium heat.
    • Fry croquettes for 3 minutes per side until golden brown and cooked through.
    • Drain on paper towels.

Preparing the Rice

  1. Cook the Rice:

    • Add hydrated rice, salt, and hot water to a pan. Stir.
    • Cover and cook for 5 minutes.
  2. Combine Rice and Croquettes:

    • Add butter to cooked rice.
    • Add fried croquettes to the pan.
    • Stir gently and cook for 5-8 more minutes.
