Instructions:
- Combine ingredients: In a bowl, combine the shredded potatoes, eggs, flour, pepper, salt, onion, and baking powder. Knead the mixture well with your hands until thoroughly combined.
- Heat the oil: Heat the vegetable oil in a skillet over medium-high heat.
- Cook the pancakes: Using a ¼ cup measure, scoop the potato mixture into the hot oil. Cook each pancake for a few minutes on each side, or until golden brown and crispy.
- Drain and serve: Remove the cooked pancakes from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve immediately.
