German Potato Pancakes Recipe

Ingredients (Serves 15):

Gold potatoes, shredded 6
Eggs, large 2
Flour 2 tablespoons
Pepper ¼ teaspoon
Salt ½ teaspoon
Onion, finely chopped ½ cup
Baking powder ¼ teaspoon
Vegetable oil, for frying ¼ cup

Instructions:

  1. Combine ingredients: In a bowl, combine the shredded potatoes, eggs, flour, pepper, salt, onion, and baking powder. Knead the mixture well with your hands until thoroughly combined.
  2. Heat the oil: Heat the vegetable oil in a skillet over medium-high heat.
  3. Cook the pancakes: Using a ¼ cup measure, scoop the potato mixture into the hot oil. Cook each pancake for a few minutes on each side, or until golden brown and crispy.
  4. Drain and serve: Remove the cooked pancakes from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve immediately.
