Coconut Cake with Seven-Minute Frosting

Sugar 1 1/2 cups
Corn syrup 2 tablespoons
Water 1/4 cup
Egg whites 6
Vanilla 1 teaspoon

Instructions:

  1. Prepare the Frosting:

    • In a heat-proof bowl, combine sugar, corn syrup, and water.
    • Place the bowl over a saucepan of simmering water, ensuring the bottom of the bowl doesn’t touch the water.
    • Whisk continuously until the mixture reaches 160°F (71°C).
    • Remove the bowl from the heat and transfer it to a stand mixer.
    • Beat on high speed until stiff peaks form, about 6 minutes.
    • Beat in vanilla extract.
  2. Assemble the Cake:

    • Frost the cooled cake layers with the prepared seven-minute frosting.
    • Decorate with additional coconut flakes or other desired toppings.

Tip: For a more intense coconut flavor, add toasted coconut flakes to the frosting.
