This hearty and flavorful Loaded Taco Beef Casserole is a perfect weeknight dinner that’s easy to prepare and loved by the whole family. It’s a delicious combination of ground beef, black beans, corn, and melted cheese, all layered between crispy tortilla chips.

Ingredients:

Ground beef 1 pound
Taco seasoning 1 packet
Salsa 1 cup
Black beans, drained and rinsed 1 (15-ounce) can
Frozen corn 1 cup
Crushed tortilla chips 2 cups
Shredded cheddar cheese 2 cups
Sliced black olives 1/2 cup
Chopped green onions 1/4 cup
Chopped fresh cilantro (optional) 1/4 cup

Instructions:

  1. Prep the Beef: Preheat your oven to 350°F (175°C). Cook the ground beef in a large skillet over medium heat until browned. Drain any excess grease.
  2. Season the Beef: Stir in the taco seasoning and salsa, simmering until the mixture thickens.
  3. Combine Ingredients: In a large bowl, mix the beef mixture with the black beans and corn.
  4. Layer the Casserole: Spread half of the crushed tortilla chips in a 9×13-inch baking dish. Top with the beef mixture, then sprinkle with half of the cheese.
  5. Add the Final Layer: Cover with the remaining tortilla chips and cheese.
