Crockpot Creamy Potato & Hamburger Soup Recipe

Ingredients:

Ground beef 1 pound
Potatoes (medium, peeled & diced) 5-6
Onion (diced) 1
Garlic (minced) 3 cloves
Chicken broth 3 cups
Dried parsley 1 teaspoon
Dried thyme 1 teaspoon
Dried basil 1 teaspoon
Salt & pepper To taste
Whole milk or half-and-half 3 cups
Grated cheddar cheese 2 cups
All-purpose flour (optional) 1/4 cup
Butter (optional) 2 tablespoons
Chopped green onions or fresh parsley (optional) For garnish

Instructions:

  1. Cook ground beef: Brown ground beef in a pan and remove excess fat. Add to slow cooker.
  2. Add vegetables: Add diced potatoes, onion, and garlic to slow cooker with ground beef.
  3. Combine broth and seasonings: Pour chicken broth, parsley, thyme, basil, salt, and pepper into slow cooker. Stir to combine.
  4. Cook: Cook on low for 6-7 hours or high for 3-4 hours, or until potatoes are tender.
  5. Add creamy ingredients: About 30 minutes before serving, stir in milk, half-and-half, and shredded cheddar cheese until creamy.
  6. Optional: Thicken or add richness: If desired, mix flour with milk before adding to slow cooker to thicken. For extra creaminess, add butter at the end.
