These roasted Parmesan creamed onions are a delightful and comforting side dish. The sweet caramelization of the roasted onions combined with the rich and creamy sauce makes for an irresistible flavor combination.

Large sweet onions, peeled and sliced ½ inch thick | 4 |
Extra virgin olive oil | 3 tbsp |
Heavy cream | 1 cup |
White wine | ¼ cup |
Grated Parmesan cheese | ¼ cup |

Instructions:
- Prepare the onions: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Peel onions and slice into ½-inch thick rings. Place on prepared baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast the onions: Place baking sheet in preheated oven and roast for 25-30 minutes, or until golden brown and caramelized. Turn onions halfway through cooking time.
- Prepare the cream sauce: In a medium saucepan, combine heavy cream and white wine. Bring to a simmer over medium heat. Add Parmesan cheese and stir until melted and sauce is thickened. Season with salt and pepper.
- Combine and bake: Remove roasted onions from oven and transfer to a baking dish. Pour Parmesan cream sauce over onions. Return dish to oven and bake for 10-15 minutes, or until sauce is bubbly and slightly golden.
- Serve: Remove dish from oven and let cool slightly before serving. Enjoy as a side dish with your favorite main course.
