These fluffy, flaky biscuits are a classic Southern staple. They’re perfect for breakfast, brunch, or as a side dish.

Instructions:
- Preheat oven: Preheat your oven to 425°F (220°C). Line a baking sheet.
- Combine dry ingredients: Whisk together flour, baking powder, baking soda, salt, and sugar (if using).
- Cut in butter: Cut cold butter into the flour mixture until it resembles coarse crumbs.
- Add buttermilk: Make a well in the center of the flour mixture and pour in cold buttermilk. Gently stir until just combined.
- Fold and roll dough: Transfer dough to a floured surface. Knead gently 4-5 times. Roll out into a rectangle. Fold into thirds, turn 90 degrees, and roll out again. Repeat 2-3 times.
- Cut biscuits: Roll or pat dough to ¾-inch thickness. Cut out biscuits with a 2-inch cutter or glass.
- Bake biscuits: Place biscuits on the prepared baking sheet. Brush with melted butter. Bake for 12-15 minutes, or until golden brown and risen.
- Serve warm: Let cool slightly before serving. Enjoy with butter, honey, jam, or your favorite toppings.
