Filling:

Baking powder ½ teaspoon
Grapefruit zest 1 grapefruit
Grapefruit juice, freshly squeezed 2 tablespoons
Lemon juice, freshly squeezed 1 tablespoon
Vanilla extract 1 teaspoon
Red food coloring (optional) 1-2 drops

Instructions:

  1. Prepare the Crust:

    • Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
    • In a medium bowl, combine flour, powdered sugar, and salt.
    • Cut in cold butter until mixture resembles coarse crumbs.
    • Press the mixture into the prepared pan to form an even layer.
