A patient of mine told me about this recipe, so I had to make it!

These fluffy fritters are packed with the flavor of Granny Smith or Honey Crisp apples. They’re perfect for a sweet breakfast or a delicious snack.

Ingredients:

Ingredient Quantity
All-purpose flour 1 1/2 cups
Sugar 1/4 cup
Baking powder 2 teaspoons
Salt 1/2 teaspoon
Cinnamon 1 1/2 teaspoons
Milk 1/3 cup
Eggs 2
Applesauce 3 tablespoons
Granny Smith or Honey Crisp apples, peeled, cored, and diced 2 large
Canola oil for frying

For the glaze:

Confectioners’ sugar 2 cups
Milk 1/4 cup
Vanilla 1/2 teaspoon

Instructions:

  1. Place cooling racks over baking sheets lined with wax paper. Set aside.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. Make a well in the center and add the milk, eggs, and applesauce. Stir just to combine.
  4. Fold in the diced apples.
  5. Heat 1 1/2-2 inches of oil in a heavy cast iron skillet, Dutch oven, or deep fryer to 375°F (190°C).
  6. Drop about 1/4 cup of batter per fritter into the hot oil, spreading it out as you drop.
  7. Cook each side until golden brown, approximately 2 minutes per side.
  8. Remove the fritters to paper towels to drain.

Make the glaze:

  1. In a large bowl, whisk together the confectioners’ sugar, milk, and vanilla.
  2. Dunk each fritter in the glaze, turning over to coat both sides.
  3. Place the fritters on the wire racks to air dry and drip.
