Meatloaf with Mashed Potatoes and Cheese Recipe

This classic meatloaf recipe is paired with creamy mashed potatoes and melted cheddar cheese for a comforting and satisfying meal.

For the Meatloaf:

Garlic (minced) 3 teaspoons
Onion (chopped) 1 onion
Ground beef 1 1/2 pounds
Breadcrumbs 3/4 cup
Tomato sauce 1/4 cup
Egg 1 large egg
BBQ sauce 1/4 cup
Frozen peas 1/2 cup
Fresh parsley (chopped) 1/4 cup
Salt and pepper To taste

For the Mashed Potatoes:

Butter 4 tablespoons
Potatoes (peeled and cut into pieces) 1 1/2 pounds
Heavy whipping cream 1/4 cup
Cheddar cheese (shredded) 1 cup
Salt and pepper To taste

Instructions:

  1. Prepare the Meatloaf:

    • Preheat oven to 375°F (190°C).
    • Sauté onion and garlic in olive oil until softened.
    • Combine ground beef, breadcrumbs, tomato sauce, egg, BBQ sauce, cooked onion/garlic mixture, peas, parsley, salt, and pepper in a large bowl.
    • Transfer meat mixture to a loaf pan or shape into a loaf on a parchment-lined baking sheet.
    • Bake for 45-50 minutes, or until internal temperature reaches 160°F (70°C).
  2. Make the Mashed Potatoes:

    • Boil peeled and cut potatoes until tender.
    • Drain potatoes and return to pot.
    • Add butter, heavy whipping cream, salt, and pepper.
    • Mash potatoes until smooth and creamy.
  3. Assemble and Serve:

    • Let meatloaf rest for 5 minutes before slicing.
    • Top mashed potatoes with shredded cheddar cheese.
    • Serve slices of meatloaf with mashed potatoes. Optionally, broil mashed potatoes with cheese for a melted and bubbly topping.
