5 Minute White Chocolate Caramel Pecan Fudge

White Chocolate Chips | 1 bag |
Vanilla Extract | 1/2 teaspoon |
Butter | 4 tablespoons |
Pecans (chopped) | 1 cup |
Caramel Sauce | 1/2 cup (see below) |
For the Caramel Sauce:

Water | 1/4 cup |
Butter | 1/2 cup |
Heavy Cream | 1/2 cup |
Vanilla Extract | 1 teaspoon |
Kosher Salt | Pinch |
Instructions:
Make Caramel Sauce:
- In a saucepan, combine sugar and water. Stir and cook over medium heat until sugar dissolves.
- Increase heat and cook until amber colored, swirling pan occasionally.
- Add butter, stirring gently. Remove from heat and add vanilla, heavy cream, and salt. Stir to combine. Let cool before refrigerating.
Make Fudge:
- In a microwave-safe bowl, combine chocolate chips, sweetened condensed milk, and butter. Heat in 30-second intervals, stirring until mostly smooth with a few flecks of unmelted chocolate.
- Add vanilla extract and pecans. Stir to combine.
- Pour fudge onto a parchment-lined tray and spread to 1-inch thickness.
- Drizzle with caramel sauce and swirl with a knife.
- Chill until ready to serve. Slice into squares and store in an airtight container.
