Mississippi Mud Potatoes Recipe

Ingredients:

Russet potatoes (peeled and diced) 2 pounds
Bacon (cooked and crumbled) 8 slices
Cheddar cheese (shredded) 1½ cups
Monterey Jack cheese (shredded) ½ cup
Sour cream 1 cup
Butter (melted) ¼ cup
Green onions (chopped) ½ cup
Garlic powder 1 teaspoon
Onion powder 1 teaspoon
Paprika 1 teaspoon
Salt and pepper To taste

Instructions:

  1. Prepare ingredients: Preheat oven to 375°F (190°C). Cook bacon and crumble. Peel and dice potatoes.
  2. Season potatoes: Toss potatoes with melted butter, garlic powder, onion powder, paprika, salt, and pepper.
  3. Arrange potatoes: Spread seasoned potatoes in a greased 9×13-inch baking dish. Cover with foil and bake for 25-30 minutes, or until tender.
  4. Add cheese and bacon: Remove foil. Sprinkle with cheddar and Monterey Jack cheese, then add crumbled bacon. Bake uncovered for 10-15 minutes, or until cheese is melted and bubbly.
  5. Add sour cream and green onions: Dollop sour cream over potatoes. Sprinkle with green onions.
