Mexican Casserole Recipe

This hearty and flavorful Mexican casserole is a satisfying and easy-to-make dish that’s perfect for a family dinner or a weeknight meal. The combination of ground beef, beans, corn, and tortillas creates a delicious and comforting dish.

Ingredients:

Ingredient Quantity
Ground beef (extra lean, drained or rinsed) 1 lb
Onion, chopped 1/2 cup
Canned jalapeno slices, chopped 1/4 cup
Fresh tomatoes, chopped or canned diced tomatoes 2 cups
Kernel corn, drained 1 (15-ounce) can
Black beans, rinsed and drained 1 (15-ounce) can
Taco seasoning mix 1 (1 1/4-ounce) package
Corn tortillas 8
Nonfat sour cream 3/4 cup
Reduced-fat Mexican cheese blend, shredded 1/3 cup
Fresh cilantro, chopped 1/3 bunch (to taste)

Instructions:

  1. Prepare the Ground Beef Mixture: Cook ground beef and onions in a large skillet over medium-high heat until beef is browned and onions are softened. Drain excess fat. Add jalapenos and taco seasoning mix. Cook for 1-2 minutes. Add tomatoes, corn, and black beans. Stir to combine and simmer for 5 minutes.
  2. Assemble the Casserole: Preheat oven to 375°F (190°C). In a greased 9×13-inch baking dish, layer 4 corn tortillas, spread half of the ground beef mixture, top with half of the sour cream and cheese. Repeat layers with remaining tortillas, ground beef, sour cream, and cheese.
  3. Bake the Casserole: Place baking dish in preheated oven and bake for 25-30 minutes, or until cheese is melted and bubbly.
  4. Serve: Remove casserole from oven and let cool for a few minutes. Sprinkle with chopped cilantro. Serve hot.
