Mexican Casserole Recipe

Nonfat sour cream | 3/4 cup |
Reduced-fat Mexican cheese blend, shredded | 1/3 cup |
Fresh cilantro, chopped | 1/3 bunch (to taste) |
Instructions:
- Prepare the Ground Beef Mixture: Cook ground beef and onions in a large skillet over medium-high heat until beef is browned and onions are softened. Drain excess fat. Add jalapenos and taco seasoning mix. Cook for 1-2 minutes. Add tomatoes, corn, and black beans. Stir to combine and simmer for 5 minutes.
- Assemble the Casserole: Preheat oven to 375°F (190°C). In a greased 9×13-inch baking dish, layer 4 corn tortillas, spread half of the ground beef mixture, top with half of the sour cream and cheese. Repeat layers with remaining tortillas, ground beef, sour cream, and cheese.
- Bake the Casserole: Place baking dish in preheated oven and bake for 25-30 minutes, or until cheese is melted and bubbly.
- Serve: Remove casserole from oven and let cool for a few minutes. Sprinkle with chopped cilantro. Serve hot.
