Ingredients:

All-purpose flour 2 cups
Salt 1/2 teaspoon
Baking soda 1 teaspoon
Baking powder 1/2 teaspoon
Ground cloves 1 teaspoon

Unsalted butter (softened) 3/4 cup
Sugar 2 cups
Large eggs 2
100% pure pumpkin (15 oz can) 1 can

Instructions:

  1. Preheat oven: Preheat oven to 325°F (165°C). Grease two 8×4 inch loaf pans.
  2. Combine dry ingredients: In a medium bowl, whisk together flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg.
  3. Cream butter and sugar: In a large bowl, beat butter and sugar on medium speed until light and fluffy.
  4. Add eggs and pumpkin: Add eggs one at a time, beating well. Then, beat in the pumpkin.
  5. Combine wet and dry: Add the dry ingredients to the wet ingredients and mix on low speed until combined.
  6. Bake: Pour batter into prepared pans and bake for 65-75 minutes, or until a cake tester inserted into the center comes out clean.
  7. Cool: Let loaves cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.

Note: For a crispier crust, serve the bread fresh out of the oven. To freeze, wrap completely cooled bread in aluminum foil or a freezer bag and thaw overnight in the refrigerator before serving.
