This classic penuche fudge recipe is rich, creamy, and delicious. The addition of nuts adds a delightful crunch.

Ingredients:

Ingredient Quantity
Light brown sugar 2 cups
Confectioners’ sugar, sifted 3 cups
Pecans or walnuts, chopped (optional) 1 cup
Unsalted butter 2 sticks (1 cup)
Evaporated milk 5 ounces
Salt ¼ teaspoon
Vanilla extract 1 teaspoon
Nonstick spray For greasing the pan

Instructions:

  1. Prepare the pan: Grease an 8×8-inch square baking dish with nonstick spray and line with parchment paper.
  2. Melt butter and sugar: In a medium saucepan over medium heat, melt butter and add light brown sugar, evaporated milk, and salt. Stir until sugar dissolves.
  3. Boil the mixture: Bring to a boil, then reduce heat to medium-low. Cook for 3-4 minutes, stirring occasionally, until thickened.
  4. Cool and add vanilla: Remove from heat and let cool slightly. Stir in vanilla extract.
  5. Add confectioners’ sugar: Gradually sift in confectioners’ sugar, stirring constantly. Continue mixing until smooth and creamy.
  6. Fold in nuts: If using, fold in chopped nuts.
  7. Pour into pan: Pour fudge mixture into prepared pan and spread evenly.
  8. Set the fudge: Let cool at room temperature for 1 hour, then refrigerate for 2-3 hours.
  9. Cut and serve: Remove from pan, cut into squares, and enjoy.
