Ingredients:

Ground beef 1 ½ lbs
Chopped onion ½ C
Chopped bell pepper ½ C
Worcestershire sauce 2 tsp
Chopped fresh parsley 2 Tbsp
Dijon mustard 1 tsp
BBQ sauce ¼ C
Bread crumbs ⅔ C
Italian seasoning 1 tsp
Garlic powder 1 tsp
Large egg 1
Salt and pepper To taste

BBQ sauce ¼ C
Ketchup ¼ C
Honey 1 Tbsp

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine ground beef, onion, bell pepper, Worcestershire sauce, parsley, Dijon mustard, ¼ cup BBQ sauce, bread crumbs, Italian seasoning, garlic powder, egg, salt, and pepper in a large bowl. Mix until well combined.
  3. Divide the mixture evenly among 10 greased muffin cups.
  4. In a small bowl, whisk together the remaining ¼ cup BBQ sauce, ketchup, and honey.
  5. Spoon the glaze over the top of each mini meatloaf.
  6. Bake for 25 minutes, or until cooked through and the glaze is bubbly.
  7. Let cool for a few minutes before serving.
