| Fresh thyme leaves | 1 teaspoon |

| Baguette, sliced | 1 |
| Gruyère cheese, shredded | 2 cups |
Instructions:
- Caramelize the onions: In a large pot, melt butter and olive oil over medium heat. Add onions and cook, stirring frequently, for 10-15 minutes until softened. Sprinkle sugar and cook for 30-40 minutes until deeply caramelized and golden brown.
- Deglaze the pot: Add dry white wine and let simmer for 2-3 minutes until mostly evaporated.
- Add broth and herbs: Pour in beef broth, add bay leaf and thyme, and bring to a simmer. Let simmer for 20-30 minutes. Season with salt and pepper.
