Pizza Stuffed Zucchini Boats

These Pizza Stuffed Zucchini Boats are a healthier and more flavorful alternative to traditional pizza. They’re packed with the classic flavors of pizza, including marinara sauce, mozzarella, provolone, pepperoni, and olives, all baked into a low-carb zucchini shell.

Ingredients:

Ingredient Quantity
Zucchini 4
Olive oil 1 tablespoon
Onion, finely chopped 1 small
Garlic, minced 2 cloves
Crushed rosemary 1/4 teaspoon
Dried thyme leaves 1/4 teaspoon
Dried oregano 1/4 teaspoon
Marinara sauce 1 cup
Shredded mozzarella cheese 1 cup
Shredded provolone cheese 1/2 cup
Mini pepperoni 1/3 cup
Sliced black olives 1/4 cup
Chopped fresh basil For garnish

Instructions:

  1. Prepare the Zucchini:

    • Preheat oven to 375°F (190°C).
    • Wash and cut zucchini in half lengthwise. Scoop out seeds and some flesh.
  2. Cook the Filling:

    • Bake for 20-25 minutes, or until zucchini is tender and cheese is melted.
