For the Icing
Butter or margarine 6 tablespoons
Fat-free milk 1/3 cup
Unsweetened cocoa 1/4 cup
Powdered sugar 3 cups
Chopped pecans (toasted) 1/4 cup
Vanilla extract 2 teaspoons

Instructions:

  1. Preheat oven: Set your oven to 375°F (190°C).
  2. Prepare the pan: Grease and flour a 15×10 inch jelly-roll pan.
  3. Combine dry ingredients: In a large bowl, whisk together 2 1/2 cups flour, 2 cups sugar, 1 teaspoon baking soda, 1 teaspoon cinnamon, and 1/4 teaspoon salt.
  4. Make the wet ingredients: In a small saucepan, combine 3/4 cup water, 1/2 cup butter, and 1/4 cup unsweetened cocoa. Bring to a boil, stirring constantly. Remove from heat and pour into the dry ingredients.
  5. Beat batter: Beat the mixture at medium speed with an electric mixer until well-combined. Add 1/2 cup buttermilk, 1 teaspoon vanilla extract, and 2 large eggs. Beat until well-incorporated.
  6. Bake: Pour the batter into the prepared pan and bake for 17 minutes, or until a toothpick inserted into the center comes out clean. Let cool on a wire rack.
