Ingredients:

Ingredient Quantity
All-purpose flour 2 cups
Granulated sugar 1/4 cup
Baking powder 1 tablespoon
Salt 1/2 teaspoon
Ground cinnamon 1/2 teaspoon
Large eggs 2
Whole milk 3/4 cup
Vanilla extract 1 teaspoon
Fresh peaches, peeled, pitted, and diced 4
Vegetable oil For frying
Powdered sugar For dusting

Instructions:

  1. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  2. In a separate bowl, beat eggs. Stir in milk and vanilla.
  3. Gradually combine wet ingredients with dry ingredients, mixing until just combined.
  4. Gently fold in diced peaches.
  5. Heat vegetable oil in a deep pan over medium-high heat to 375°F (190°C).
  6. Spoon batter into hot oil, frying a few at a time.
  7. Cook fritters for 2-3 minutes per side, or until golden brown.
  8. Drain fritters on paper towels.
