All-purpose flour 1 and 2/3 cups
Canned pumpkin 1 cup
Eggs, room temperature 2
Baking soda 1 teaspoon
Ground cinnamon 1 teaspoon
Granulated sugar 1 and 1/2 cups
Salt 3/4 teaspoon
Baking powder 1/2 teaspoon
Ground cloves 1/4 teaspoon
Ground nutmeg 1/2 teaspoon
Oil 1/2 cup
Water 1/2 cup
Chopped walnuts 1/2 cup
Raisins (optional) 1/2 cup

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Whisk flour, baking soda, cinnamon, salt, baking powder, nutmeg, and cloves in a bowl.
  3. Beat eggs and sugar in a large bowl. Add pumpkin and oil, mix well.
  4. Gradually add dry mixture to wet mixture, stir until combined.
  5. Mix in water. Fold in walnuts and raisins (if using).
  6. Pour batter into loaf pan. Bake 60-70 minutes until toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.
