Flour 6 cups (divided)
Cold water Approximately 600 milliliters
Butter 3 tablespoons (divided)

Instructions:

  1. Prepare the Yeast Starter: Combine yeast and flour in a bowl. Add water and whisk until smooth. Let rest for 15 minutes until bubbly.
  2. Prepare the Dough: Add remaining yeast to the starter. Stir in salt and sugar. Gradually add flour, mixing well. Slowly add cold water until dough is soft but not sticky. Knead dough until smooth and elastic.
  3. Incorporate Butter: Spread 1 tablespoon of butter on a surface. Knead dough on buttered surface. Add remaining butter in small portions, kneading until incorporated. Let dough rest for 15-20 minutes.
  4. Shape the Loaves: Deflate dough, divide into 60-gram pieces. Shape each piece into a loaf. Let loaves rest for 15-20 minutes.
  5. Bake the Loaves: Preheat oven to 375°F (190°C). Bake loaves for 20-25 minutes or until golden brown and hollow-sounding.
