This Loaded Nacho Tater Tot Casserole is a delicious and fun twist on classic nachos. It’s perfect for a weeknight meal or a potluck gathering. Layers of seasoned ground beef, vegetables, and cheese are topped with crispy tater tots for a satisfying and flavorful dish.

Ingredients:

Ground Beef 1 lb
Onion, diced 1 small
Taco seasoning mix 1 packet
Diced tomatoes with green chilies (undrained) 1 can (10 oz)
Black beans, rinsed and drained 1 can (15 oz)
Frozen corn 2 cups
Frozen tater tots 4 cups
Shredded cheddar cheese 2 cups
Sour cream 1 cup
Sliced black olives 1/4 cup
Sliced green onions 1/4 cup
Chopped fresh cilantro 1/4 cup

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef and onion until browned and softened. Drain any excess fat.
  3. Stir in the taco seasoning, diced tomatoes, black beans, and corn. Simmer for a few minutes.
  4. Spread the beef mixture evenly in a baking dish.
  5. Arrange the frozen tater tots in a single layer on top.
  6. Sprinkle with shredded cheese.
  7. Bake for 25-30 minutes, or until the tater tots are golden brown and the cheese is melted and bubbly.
  8. Let it cool slightly before serving. Garnish with dollops of sour cream, olives, green onions, and cilantro.
