These bite-sized treats are perfect for dipping and sharing. Florets of broccoli are steamed and combined with melty cheeses, then coated in a crispy panko crust.

Crispy Broccoli Cheese Bites

Ingredients:

Ingredient Quantity
Fresh broccoli florets 1 1/2 cups, heaping
Shredded Colby cheese 1 cup
Shredded cheddar cheese 1 cup
Velveeta cheese, diced 4 ounces
Crushed red pepper flakes (optional) 1/2 teaspoon
Panko breadcrumbs 2 1/4 cups, divided
Egg, lightly beaten 1
All-purpose flour 1/2 cup
Eggs, lightly beaten (for coating) 2
Vegetable or canola oil for frying

Instructions:

  1. Steam the Broccoli: Steam the broccoli for 5-7 minutes until tender. Drain well, then chop finely. Pat the chopped broccoli with paper towels to remove any excess moisture.

  2. Mix the Cheeses and Broccoli: In a large bowl, combine the chopped broccoli, shredded Colby cheese, cheddar cheese, diced Velveeta cheese, red pepper flakes (if using), and 1 cup of Panko breadcrumbs. Mix well.

  3. Shape the Bites: Using your hands, form the mixture into small balls or patties, about 20 in total. Place them on a baking sheet lined with parchment paper.

  4. Set Up the Coating Station: Prepare three bowls for coating: one with flour, one with the remaining 1 1/4 cups of Panko breadcrumbs, and one with the 2 beaten eggs.

  5. Coat the Bites: Roll each broccoli cheese bite in the flour, then dip it in the beaten egg, and finally coat it evenly with the Panko breadcrumbs. Gently press the breadcrumbs to adhere to the bites.

  6. Fry the Bites: Heat enough oil in a large skillet or frying pan to cover the bottom over medium-high heat. Fry the bites in batches for 2-3 minutes per side, or until golden brown and crispy. Transfer them to a paper towel-lined plate to drain excess oil.

  7. Serve and Enjoy: Serve the warm broccoli cheese bites with your favorite dipping sauce, like ranch dressing, marinara sauce, or honey mustard. Enjoy these delicious bites as an appetizer or anytime snack!
