Ingredients:

Ingredient Quantity
Beef Chuck Roast 2 pounds, trimmed and cut into chunks
Onions 4 large, thinly sliced
Garlic Cloves 4, minced
Beef Broth 1 cup
Worcestershire Sauce 2 tablespoons
Balsamic Vinegar 1 tablespoon
Dried Thyme 2 teaspoons
Salt and Pepper To taste
Olive Oil 2 tablespoons

Instructions:

  1. Caramelize the Onions (20-25 minutes):

    • Heat olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until golden brown and caramelized. This takes about 20-25 minutes.
    • Add the minced garlic during the last few minutes of cooking and sauté until fragrant.
  2. Season the Beef (2 minutes):

    • Season the beef chunks generously with salt, pepper, and dried thyme.
  3. Layer in the Slow Cooker (5 minutes):

    • Transfer the caramelized onions and garlic to the bottom of your slow cooker, creating a flavorful bed.
    • Arrange the seasoned beef chunks on top of the onions in a single layer.
  4. Create the Flavor Base (2 minutes):

    • In a small bowl, whisk together the beef broth, Worcestershire sauce, and balsamic vinegar.
    • Pour this mixture over the beef and onions in the slow cooker, ensuring everything is evenly coated.
  5. Slow Cook and Enjoy (6-8 hours):

    • Cover the slow cooker and cook on low heat for 6-8 hours, or until the beef is tender and falls apart easily with a fork.
    • Serve the tender beef over mashed potatoes, rice, or your desired side dish. Garnish with fresh herbs for added flavor and color.
