Beef chuck roast 1 1/2 pounds, sliced into bite-sized pieces
Garlic cloves 2, minced
Ginger 1 tablespoon, freshly grated
Beef broth 4 cups
Soy sauce 1/4 cup
Oyster sauce 1 tablespoon
Brown sugar 1 tablespoon
Sesame oil 1 teaspoon
Chili flakes (optional) 1/2 teaspoon
Carrots 2, julienned
Red bell pepper 1, sliced
Green onions 4, chopped, white and green parts separated
Ramen noodles 8 ounces (discard flavor packets)
Sesame seeds (for garnish) to garnish
Fresh cilantro or parsley leaves (for garnish) to garnish
  1. Prep the Beef: Add the chopped beef chuck roast to your slow cooker.
  2. Whisk the Broth: In a separate bowl, whisk together the beef broth, minced garlic, grated ginger, soy sauce, oyster sauce, brown sugar, sesame oil, and chili flakes (if using).
  3. Simmer the Beef: Pour the broth mixture over the beef in the slow cooker. Add the white parts of the green onions. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
  4. Add Veggies: About 30 minutes before serving, stir in the julienned carrots and sliced red bell pepper to the slow cooker.
  5. Cook Noodles: While the veggies simmer, cook the ramen noodles according to package directions (usually 3-4 minutes in boiling water). Drain the noodles.
  6. Combine and Serve: Once the vegetables are tender and the meat is cooked, stir in the cooked ramen noodles. Serve the hot beef ramen garnished with the green parts of the onions, sesame seeds, and fresh herbs.
