Red bell pepper 1, diced
Corn kernels 1 cup (fresh, frozen, or canned)
Black beans 1 cup, drained and rinsed
Chili powder 1 teaspoon
Cumin 1/2 teaspoon
Paprika 1/2 teaspoon
Salt and black pepper To taste
Cherry tomatoes 1 cup, halved
Fresh cilantro 1/4 cup, chopped

For the Stuffed Tomatoes:

Ingredients Quantity
Large beefsteak tomatoes 6
Olive oil 1 tablespoon
Shredded lettuce 1 cup
Greek yogurt or low-fat sour cream 1/2 cup
Shredded cheddar cheese 1/2 cup (optional)
Sliced green onions For garnish (optional)
Additional cilantro For garnish (optional)

Instructions:

Step 1: Prepare the Taco Filling

  1. In a large skillet, cook the lean ground turkey over medium-high heat until it’s browned and cooked through. Break it up into crumbles as it cooks.
  2. Add the finely chopped onion and diced red bell pepper to the skillet. Sauté for a few minutes until the vegetables are tender.
  3. Stir in the corn kernels and drained black beans.
  4. Season the mixture with chili powder, cumin, paprika, salt, and black pepper. Mix well to evenly coat the ingredients. Cook for an additional 2-3 minutes to let the flavors meld.
  5. Remove the skillet from the heat and add the halved cherry tomatoes and chopped fresh cilantro. Stir to incorporate. Set the taco filling aside.

Step 2: Prepare the Tomatoes

  1. Slice the tops off the large beefsteak tomatoes and carefully scoop out the insides using a spoon. Leave a sturdy shell to hold the filling.
  2. Brush the outside of the tomato shells with olive oil to add flavor and help them roast beautifully.

Step 3: Stuff the Tomatoes

  1. Place the hollowed-out tomatoes on a serving platter.
  2. Fill each tomato shell with a generous portion of the prepared taco filling.

Step 4: Garnish and Serve

  1. Top each stuffed tomato with shredded lettuce, a dollop of Greek yogurt or low-fat sour cream, and a sprinkle of shredded cheddar cheese (if desired).
  2. Garnish with sliced green onions and additional cilantro for a burst of fresh flavor.

Step 5: Enjoy!

Serve your Healthy Taco Stuffed Tomatoes as a light and refreshing meal. Each bite is a delightful combination of juicy tomato, savory taco filling, and fresh toppings.
