Ingredients:

Graham cracker crumbs 1/1/2 cups
Light brown sugar 1/4 cup
Butter, melted 6 tablespoons

Cream cheese, softened 16 ounces
Granulated sugar 3/4 cup
Large eggs (room temperature) 2
Sour cream (room temperature) 1/2 cup
Vanilla extract 2 teaspoons
For the Cinnamon Swirl:
Butter, melted 6 tablespoons
Dark brown sugar 1 cup
Cinnamon 1 teaspoon
All-purpose flour 1/4 cup

How To Make Blender Cinnamon Roll Cheesecake Bars:

Step 1: Prepare the Crust: Preheat your oven to 350F. In a medium bowl, combine the 6 tbsp melted butter, 1/1/2 cups graham cracker crumbs, 1/4 cup light brown sugar, and 1/2 tsp salt. Mix until the crumbs are evenly moistened. Press the mixture firmly into the bottom of an 8-inch square baking dish. Bake for 8 minutes, then set aside to cool.

Step 2: Blend the Filling: Reduce the oven temperature to 325F. In a blender, combine the 16 oz cream cheese, 3/4 cup granulated sugar, and 2 tsp vanilla.1 Blend until the mixture is completely smooth. Add the 1/2 cup sour cream and blend once more. Finally, add the 2 eggs one at a time, blending briefly after each addition just until smooth. Set aside.

Step 3: Make the Cinnamon Swirl: In a medium bowl, stir together the 6 tbsp melted butter, 1 cup dark brown sugar, 1 tsp cinnamon, and 1/4 cup flour. Mix until the consistency is smooth and well combined.

Step 4: Assemble: Pour half of the cheesecake filling over the cooled crust. Dot the surface with half of the cinnamon mixture, then use a knife to swirl the two together gently. Pour the remaining cheesecake filling over the top, dot with the remaining cinnamon mixture, and swirl once more.

Step 5: Bake and Chill: Bake at 325F for 35-40 minutes, or until the center is mostly set (it should still have a slight jiggle). Remove from the oven and allow it to cool to room temperature, then refrigerate for at least 2 hours until firm.

Step 6: Serve: Once chilled, slice into bars and enjoy!
